Bilal’s Moroccan bread recipe

Morocco is considered one of the oldest kingdoms in the world for over 12 centuries, and is famous for its many and diverse cultures, especially in its international Moroccan cuisine, and bread is mentioned among its dishes. There are countless types of bread, and each region of Morocco has more than one way of preparing bread, and this method that I am going to share with you is a well-known method in the eastern part of the Kingdom.


The Ingredients:

  • 1 kilo of durum wheat flour (fino) (fine semolina)
  • 100 grams of white flour
  • 1 tablespoon of baker’s yeast dissolved in a cup of warm water
  • 1 tablespoon of olive oil
  • 1 teaspoon granulated sugar (can be omitted)
  • 1 teaspoon undiluted salt
  • Warm water to collect the dough

Decoration:

  • 1 cup semolina for topping

Instructions:

1 – Put the flour in a bowl, add all the ingredients and mix with warm water. Knead the dough well with the palm of your hand or with an electric mixer. Let it sit for 5 minutes.


2 – Cut into equal balls and sprinkle them with semolina. Make bread from them, place them in a baking tray and let them rise well.


3 – We decorate the top of the pastries with the edge of a knife, sprinkle them lightly with water and put them in the oven preheated to 180 degrees And with health and comfort.

Our Organisation

The Initative Developpement Citoyen (IDC) is a cooperative founded in April 2010 in Lastours, France with the aim to promote sustainable development, international mobility, active citizenship, mutual cooperation, ecological engagement, and awareness of different cultures.

The cooperative also organizes and hosts Erasmus-funded projects that aim to provide learning and capacity-building opportunities for the youth. The projects hosts volunteers from Europe, South America and Southeast Asia and focuses on topics related to knowledge exchange, communications, and sustainable development.
